Ingredients:

For the pastry:

  • 2 cups of all-purpose flour

  • 2 tablespoons of vegetable oil

  • 1/2 teaspoon of salt

  • 1/2 cup of warm water

For the filling:

  • 2 tablespoons of vegetable oil

  • 1 onion, finely chopped

  • 1 tablespoon of ginger-garlic paste

  • 1/2 teaspoon of ground turmeric

  • 1/2 teaspoon of ground cumin

  • 1/2 teaspoon of ground coriander

  • 1/2 teaspoon of red chili powder

  • 2 cups of potatoes, peeled and chopped

  • 1/2 cup of green peas

  • Salt, to taste

  • Oil, for frying

Directions:

  1. Make the pastry:

In a large mixing bowl, combine the flour, salt, and vegetable oil. Mix until the mixture resembles breadcrumbs. Slowly add the warm water and mix until the dough comes together. Knead the dough for a few minutes until it becomes smooth and elastic. Cover it with a damp cloth and let it rest for at least 30 minutes.

  1. Make the filling:

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn translucent. Add the ginger-garlic paste and sauté for a few more minutes. Add the ground turmeric, ground cumin, ground coriander, and red chili powder. Stir for a minute or two until the spices become fragrant.

Add the chopped potatoes and green peas, and stir well. Add enough water to cover the vegetables and bring the mixture to a boil. Reduce the heat to low and let the mixture simmer until the potatoes are cooked through. Remove from heat and let it cool.

  1. Assemble the samosas:

Divide the dough into 10-12 equal portions. Roll each portion into a ball and then roll it out into a thin circle. Cut the circle in half.

Take one half and fold it to form a cone. Fill the cone with the potato and pea filling. Wet the edges of the cone with water and seal it shut. Repeat the process with the remaining dough and filling.

  1. Fry the samosas:

Heat oil in a deep frying pan. Once the oil is hot, gently place the samosas in the pan and fry until they are golden brown. Remove from the pan and place them on a paper towel to remove excess oil.

  1. Serve and enjoy:

Serve the samosas hot with your favorite chutney or dip. These tasty treats are perfect for any occasion, whether you're hosting a party or just looking for a snack to enjoy on your own.
