Hearty Lentil Soup: A Warm and Comforting Meal
Ingredients:
1 pound dried green or brown lentils, rinsed and drained
2 tablespoons olive oil
1 onion, chopped
3 garlic cloves, minced
2 carrots, chopped
2 celery stalks, chopped
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
6 cups vegetable or chicken broth
1 bay leaf
2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons tomato paste
2 tablespoons freshly squeezed lemon juice
Chopped fresh parsley or cilantro, for serving (optional)
Directions:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until soft and translucent, about 5 minutes.
Add the carrots and celery and continue cooking for another 5 minutes, stirring occasionally.
Add the cumin, smoked paprika, and cayenne pepper (if using) to the pot and stir to coat the vegetables.
Add the lentils, broth, bay leaf, salt, and black pepper to the pot and stir well to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30-40 minutes, or until the lentils are tender and fully cooked.
Add the tomato paste and lemon juice to the soup and stir well. Remove the bay leaf.
Using an immersion blender or by transferring the soup to a blender in batches, puree the soup until it reaches a smooth and creamy consistency.
Taste and adjust the seasoning as needed.
Serve the soup hot, topped with fresh parsley or cilantro (if using).
