1/2 cup old-fashioned rolled oats
1/2 cup milk of your choice (dairy milk, almond milk, soy milk, etc.)
1/4 cup plain Greek yogurt
1 tbsp honey or maple syrup (optional)
1/4 tsp vanilla extract (optional)
Pinch of salt
Toppings of your choice (such as fruit, nuts, seeds, or granola)
Directions:
In a mason jar or bowl, combine the oats, milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir well to combine.
Cover the jar or bowl with a lid or plastic wrap, and place it in the refrigerator overnight (or for at least 4 hours).
In the morning, remove the jar or bowl from the refrigerator and give the mixture a good stir. If it seems too thick, you can add a splash of milk to thin it out.
Top with your desired toppings, such as fresh fruit, nuts, seeds, or granola.
