Ingredients:
For the salad:
4 cups chopped romaine lettuce
1 cup chopped cucumber
1 cup chopped tomatoes
1 cup chopped green bell pepper
1/2 cup chopped red onion
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
1/2 cup chopped radish
1/2 cup chopped green onion
1 cup pita chips
For the dressing:
1/4 cup fresh lemon juice
1/4 cup olive oil
2 garlic cloves, minced
1 tsp sumac
Salt and pepper to taste
Directions:
Preheat your oven to 375°F.
Cut 2-3 pita pieces of bread into bite-sized pieces and place them on a baking sheet. Bake for 10-15 minutes or until they are crispy and golden brown.
In a large bowl, combine the chopped romaine lettuce, cucumber, tomatoes, green bell pepper, red onion, parsley, mint, and radish.
In a small bowl, whisk together the fresh lemon juice, olive oil, minced garlic, sumac, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Add the chopped green onion and pita chips to the salad and toss again.
Let the salad sit for at least 10 minutes before serving to allow the flavors to meld together.
