Ingredients:


  • 1 quart of milk (whole or 2%)

  • 1/4 cup of plain yogurt with live cultures

  • Cheesecloth

  • A strainer

  • A large bowl



Directions:


  1. Heat the milk: Pour the milk into a large saucepan and heat it over medium heat. Stir it occasionally to prevent it from burning. Heat the milk until it reaches a temperature of 180°F.

  2. Cool the milk: Once the milk reaches 180°F, remove it from heat and let it cool to a temperature of 110°F.

  3. Mix the yogurt: In a small bowl, whisk the 1/4 cup of plain yogurt with a bit of the cooled milk until it's smooth and lump-free.

  4. Add the yogurt mixture to the milk: Pour the yogurt mixture into the cooled milk and stir until it's fully combined.

  5. Let the mixture sit: Cover the mixture with a lid and place it in a warm spot, like a turned-off oven with the light on. Leave it there for at least 6 hours, or overnight.

  6. Strain the yogurt: After the mixture has sat for the desired amount of time, line a strainer with cheesecloth and set it over a large bowl. Pour the yogurt mixture over the cheesecloth-lined strainer and let it drain for a few hours, or until it reaches your desired thickness.

  7. Store the yogurt: Once the yogurt has drained, transfer it to a container with a lid and store it in the fridge for up to a week.
